In the heart of downtown
Franklin, TN you will discover one of the best bakeries around! Their cookies
might even put your grandmother’s to shame. Every time I go there I have to get
the Tea Cake and Molasses cookies. I know…I know… two cookies, but this is a
place where everything taste so good calories don’t matter! Even though I love
the Tea Cake cookies, the Molasses cookies are my absolute favorite! Luckily
Merridee’s Breadbasket was kind enough to put out a cookbook and here is the
recipe for the fabulous Molasses cookies!
¾
cup shorting (half butter)
1 cup sugar
¼
cup molasses (we use sorgham)
1 egg
2 teaspoons soda
½
teaspoon cloves
2 cups all-purpose
flour
½
teaspoon ginger
1 teaspoon cinnamon
½
teaspoon salt
Melt shortening in a 3 or 4
quart saucepan over low heat. Remove from heat; let cool. Add sugar, molasses
and egg. Beat well. Sift together dry ingredients and add, all at once, to
first mixture. Mix until well blended. Chill at least one hour.
Form in 1-inch balls, roll in
granulated sugar and place on greased cookie sheet 1 inch apart. Bake at 375°F
for 8-10 minutes; just until set and lightly browned. They should be chewy and
crunchy when cool.
As Paula Deen would say, these
cookies will make your tongue wanna slap your brains out! Enjoy the cookies and
thank you Merridee’s for the amazing recipe!
