Summer Corn Salad

 It always seems like there is something to embrace with the coming of each season and for me the colors, fashion, time by the water, flexibility of time, and the traditional summer foods are just a few summer things that makes my heart happy. I have always loved how summer dishes always taste so light, fresh, crisp, and refreshing. This past weekend I made a corn salad with a slight tex-mex flair to it that is so easy to make and is such a great side edition to basically any summer entrée.

Ingredients:

2 Bags of frozen corn

1 Small green bell pepper {diced}

½ Red onion {diced}

1 Jalapeno {diced}

1 Package of cherry tomatoes {cut tomatoes in half}

Cilantro

Crumbled feta cheese

2 Tbs. cinder vinegar

2 Tbs. extra virgin olive oil

Juice of 1 lime

Zest of half of a lime

Butter

Pepper

Salt

Instructions:

1.      Warm frozen corn up according to the instructions on the bag

2.    After Corn is heated pour into a medium size mixing bowl, add about ½ tbs. butter and stir until melted. Add salt and pepper to taste and put in refrigerator while you prepare the rest of the ingredients

3.    Once you have diced all the vegetables add the diced green bell pepper, onion, and jalapeno to the corn mixture. Stir until diced ingredients is evenly distrusted throughout the corn mixture

4.    Cut cherry tomatoes in half and fold into the rest of the mixture

5.    Zest half of a lime over mixture and gently fold mixture together

6.    Drizzle 2 tbs. cinder vinegar over mixture and gently fold into the mixture

7.     Drizzle 2 tbs. extra virgin olive oil over mixture and gently fold in

8.    Add the juice of one lime to mixture and gently fold in

9.    Roughly chop about ¼ cup of cilantro to mixture and fold in until evenly distributed throughout mixture

10.  Add desired amount of crumbled feta cheese and fold in

11.    Can either serve right away or can be stored in refrigerator until ready to serve. Serves about 8 people

Summer Blues

 Summer blues definitely trump the Monday blues, every, single, time. I know yellow is technically ‘the color” of the year, but for me personally, blue will always be the color of the year, every year, especially during the summer months. Needless to say, I love the color blue, I even love what it symbolizes – serenity, stability, inspiration, wisdom, and health. Plus, like leopard, blue is basically a neutral, it can literally stand by itself or act as a completely color to any color in the color wheel. Let’s face facts; the only reason blue isn’t the color every year is so the other colors can have a moment.

 There are so many beautiful shades of blue out for this summer that I just couldn’t help but share a few. And on a separate note, I am completely loving the fact that J. Crew is utilizing their noteworthy cornflower blue for a few of their spring and summer items!

J. Crew Bow-Tie One-Shoulder One-Piece Swimsuit

American Girl Celebrating 35 Years

 Original American Girl Dolls are like Disney movies – if you loved them when you were younger, you still love them today. I was so excited last week when I discovered that American Girl bought back their six original dolls, in their original welcome outfits! I could never figure out why American Girl decided to change Samantha’s welcome outfit… Plaid dress belted at the waist, matching plaid bow, black tights, and clutch – if J. Crew existed in 1904, Samantha Parkington would have been the original J. Crew classically preppy girl.

Growing up in the 90’s, anything from American Girl was the ultimate Christmas gift for basically any girl out there. I am sure I am not the only who went through the American Girl catalog multiple times, carefully circling each desired item with a sharpie marker, and then painstakingly going back through to place a star next to the items that would make my Christmas wish list in my letter to Santa.

My first American Doll was Samantha; my six-year-old self could barely contain her excitement at the sight of that unmistakable dark red box as I peeled back the Christmas wrapping paper. Two Christmases later Santa decided to bring Kirsten, and I was just over the moon with the two dolls.

Of the things I kept from my childhood, you can rest assured that Samantha and Kirsten are among them… I always wanted a Molly doll as well, but by the time I found appreciation for her stories I was at the age where I felt like getting a doll wasn’t the ‘cool’ thing to do. But now that she is back I am debating whether or not to purchase her…I mean, are you ever really too old to indulge in a nostalgic item of any sort?

I so hope that American Girl decides to keep the original six dolls around, and not for just a limited time. Maybe it’s just me, because these dolls and their books hold such a special place in my childhood memories, but I loved all of their stories, and overall I prefer the original dolls to the newer dolls. They are just a classic.

Links I'm Loving

 I feel like overall this week just had a stressful and depressing tone to it {I think due to the weather, maybe…}, needless to say, I was glad for the weekend to get here. On the plus side I have come across so many great links this week! So… here are my top five favorite links! Also, a very Happy Mother’s Day to all the mother’s out there!

One// Rachel Brosnahan on Minimalist Makeup

I think it’s safe to say that Rachel Brosnahan has won a pretty high percentage of people over with her performance as Mrs. Maisel. I love watching people’s skin care routine – it is always so interesting to see what other people’s favorite products are and their beauty tips. I love how easy and natural Brosnahan’s everyday routine is

Two// J. Crew Puff-Sleve Ribbed Sweater

J. Crew is my most favorite store to shop for tops, simple tees, sweater, etc. This top is listed as a sweater, but it definitely is more along the line of a thick top, which makes it the perfect item to use as a transitional piece. Plus, I love the added detail of the puff sleeve!

Three// The Handmaid’s Tale

A show no one has hear of, I’m sure… Okay, okay, obviously everyone has heard of this by this point, but I am new to the game. I just started watching the series last weekend, and I am completely addicted! The story line is so weird and so crazy and so well done that you just can’t help but watch one episode after the other

Four// Lipton Stress Therapy Tea

I think it is fair to say that everyone’s anxiety and stress level is slightly higher than it usually is under normal circumstances. This tea really is so relaxing and I love drinking a cup at the end of the day; it is a nice little cherry to top off the day.

Five// Liv Tyler Does Her 25-Step Beauty and Self-Care Routine

I obviously hopped down into the rabbit hole that is YouTube… one beauty routine video leads to another beauty routine video… I love Liv Tyler, her voice is so relaxing to listen to and she just seems like such a nice person, and let’s not forget to mention how amazing her skin looks!

 Confession, Mother’s Day is next weekend and I still haven’t done any gift shopping… I feel like I am probably not the only one that is in this boat at the current moment. I love the blue color this pan comes in. I haven’t tried it out myself, but have heard such wonderful reviews about the Always Pan and just had to include it in the gift guide

Five// Cool Mama – Mom Necklace – Chalcedony Stone

I love how the gold detail of this necklace perfectly compliments the blue/green color of this particular stone. I also completely love how that the company this necklace comes is geared towards supporting and empowering women

Six// Sarah Flint Grear Sandal

Love, love, love these sandals and this shoe company. All their shoes are so beautifully designed, comfortable, and can be would look great of any woman of any age. I particularly the Grear Sandals right now. All day wear comfortable and I love how they tie

Seven// Tory Burch Robinson Slim Wallet

This wallet is so classic and can be used as either a clutch or a wallet

Eight// Bows & Blue Dinner Napkin

I will take a bow on everything, please. These napkins are just so beautiful and I love the detail of the embroidered bow {available in blue or pink}. I feel like these can be used for so many different occasions from baby showers to holidays  - definitely a great gift for mom

Nine// Little Words Project Mama + Mini Bracelets

I love women run companies that make a point to empower other women, and Little Word Project does just that. This would be such a fun gift for the new mom in your life, complete with a matching bracelet for her mini me

Ten// On Cloud Sneakers

I feel like On’s have caught on like fire. My own mother wears these all of the time, so it just seemed like a perfect gift option to include

Eleven// Marble Honeycomb Coasters, Set of 4

I have a soft spot for items that incorporate a bee into the design; I don’t’ know why, but there is something about it that makes it seem ‘french’. These are available right now at Williams-Sonoma!

Twelve// Books With Style Vogue x Music

Is there ever such a thing as owning too many coffee table books? Seriously, a ‘can’t go wrong’ gift

Thirteen// Voluspa Large Jar Candle
