Caprese Bread

 I shared this simple little recipe in an Instagram Reel a few weeks ago, but thought I would share it on here as well. When the weather starts to cool down I feel like there is nothing better than a warm piece of toast either by itself or dressed up a little bit. This little recipe is so easy and always looks so beautiful, and I just love the texture of the roasted tomatoes on a warm piece of bread. Supper easy and is perfect for a quick lunch or the perfect addition to any pasta night!

Ingredients:

-       Olive oil

-       Cherry tomatoes 

-       Loaf of French bread

-       Shredded mozzarella cheese

-       Fresh basil 

-       Balsamic Vinegar

-       Salt

-       Pepper

 

Directions:

1)     Cut cherry tomatoes in half and place on a foil lined half baking sheet. Drizzle tomatoes with olive oil and sprinkle with salt and pepper. Place tomatoes in oven and bake at 400 F for 20 minutes 

2)    Take tomatoes out of oven and let cool

3)    Place slice pieces of bread on a foiled lined baking sheet. Drizzle with olive oil and bake at 400 F for 2 minutes

4)   Spread roasted tomatoes onto toasted bread and sprinkle with mozzarella cheese

5)    Toast bread until cheese it melted

6)    Top bread with a drizzle of extra virgin olive oil, balsamic vinaigrette glaze, and sprinkle with fresh basil to top everything off
